If you have compared mushroom coffees, you have probably seen phrases such as “100% fruiting body” and “no mycelium.” They sound technical, and brands sometimes use them as if they settle the quality question by themselves.
The reality is more useful and more interesting. Fruiting body and mycelium describe different parts or growth stages of a fungus. They can differ in composition, but the final quality of a mushroom ingredient also depends on species, strain, cultivation, substrate, extraction, processing and testing.
Here is what those terms actually mean, what research can tell us, and what you should still ask after reading them on a coffee label.
First: a mushroom is more than the part you see
Fungi grow as networks of thread-like structures called hyphae. Those hyphae form a larger network called mycelium, which grows through or across a substrate.
Under the right conditions, many fungi also form a fruiting body: the visible reproductive structure that most of us casually call a mushroom. Its biological job is associated with producing and dispersing spores.
An easy analogy is to think of an apple tree. The roots, branches and fruit are all parts of the same organism, but they are not chemically identical. The analogy is imperfect, but it helps explain why “fruiting body” and “mycelium” are not interchangeable terms.
Why mushroom products can use different source materials
Commercial mushroom ingredients can be produced in several ways. Fruiting bodies can be cultivated, harvested, dried and milled or extracted. Mycelium can be grown through solid substrates or in liquid culture and then harvested and processed.
Those production methods matter because the material collected at the end may contain different proportions of fungal tissue, substrate-derived material and soluble compounds. That is one reason a shopper should look for more information than just a species name on the front of a package.
What does the research say about fruiting body and mycelium composition?
Research does show that fruiting bodies and mycelia can differ in composition, but the differences are not identical across every mushroom or every production system.
One food-chemistry study measured β-1,3-1,6-glucans in fruiting bodies and mycelia from several mushroom species. In the samples studied, fruiting bodies averaged a higher proportion of these glucans than mycelia. That finding is useful, but it should not be turned into the claim that every fruiting-body ingredient will always contain more of every desirable compound than every mycelial ingredient.
Other studies demonstrate why that caution matters. Research on Ganoderma (Reishi) has found substantial variation between strains, cultivation substrates and processing conditions. Researchers have also measured meaningful β-glucan content in cultivated Ganoderma mycelium. In other words, fungal chemistry is affected by much more than which growth stage appears on the label.
Even within fruiting bodies, composition can vary. A study of ten shiitake cultivars found differences in β-glucan content by cultivar and by the section of the fruiting body tested.
So is fruiting body automatically “better”?
No single phrase proves overall quality. “Fruiting body” tells you something useful about the starting material. It does not, by itself, tell you:
- which species or strain was used
- how the mushroom was cultivated
- how the ingredient was extracted
- its final composition
- whether the ingredient was independently tested
- how much is present in the finished coffee
- whether the coffee itself is any good
That is why we treat fruiting-body sourcing as one part of ingredient transparency, not a substitute for everything else.
What about mycelium grown on grain?
This is where the label can become especially useful. Some solid-state mycelium products are grown through grain or another food substrate. Depending on how the material is harvested, the finished ingredient can include both fungal tissue and residual substrate material.
That does not mean every mycelial ingredient is poor quality. It means the production method and final composition matter. If a brand emphasizes mushroom content but does not explain whether the ingredient is fruiting body, isolated mycelium, or myceliated substrate, the shopper has less information to work with.
Clear naming is valuable because it lets you compare products on something more concrete than marketing language.
What “100% fruiting body” means at Urban Calm
Urban Calm mushroom coffees use organic mushroom extracts made from 100% fruiting-body material. We do not use mycelium-based mushroom ingredients. The mushroom extracts are also third-party tested.
We chose that specification because it gives us a clear, consistent ingredient standard and lets us tell customers exactly what type of mushroom material is going into the coffee. It is a sourcing and quality decision, not a promise that drinking a cup will produce a particular medical or performance outcome.
Extraction still matters
A dried mushroom and a mushroom extract are not the same ingredient. Extraction uses water, alcohol or other controlled processing methods to separate selected soluble components from the source material.
The resulting composition can depend on the mushroom, the extraction conditions and the target compounds. Research on Ganoderma fruiting bodies, for example, has identified multiple glucan structures in different extracted fractions.
That is why a useful comparison asks more than “fruiting body or mycelium?” It also asks whether the manufacturer can clearly describe the ingredient it chose and support the claims it puts around that ingredient.
A better way to compare mushroom coffee ingredients

The coffee-first takeaway
Fruiting body vs. mycelium is worth understanding, but it is not the only decision hiding on a mushroom coffee label. A transparent product should tell you what the coffee is, which mushrooms are used, what source material the extracts come from and how the company approaches quality.
