In the lush hills of Huila, Colombia, 53 women from the ASPROTIMANA cooperative pour their passion into every coffee cherry. These skilled farmers run their own micro-mills, growing shade-grown Arabica alongside crops like bananas and corn. Through our partnership with ASPROTIMANA and their export ally, San Miguel, we ensure fair pay and premiums that support local schools and clinics. Every sip uplifts these inspiring women.
Crafted for Flavor
At 1,600 meters, Huila’s volcanic soil and crisp air produce beans packed with character. Hand-picked at peak ripeness, each cherry is depulped, fermented for 16-20 hours, washed, and dried on raised beds to capture notes of creamy caramel, milk chocolate, and bright citrus. This careful process ensures traceable, top-quality beans ready to become your perfect brew.
Roasted to Perfection
In our Calgary roastery, we transform these beans into something extraordinary through small-batch roasting. Our roasters fine-tune each batch, adjusting time and temperature to coax out the beans’ natural flavors—think silky caramel, rich chocolate, and a hint of zesty citrus. We use a precise heat profile to caramelize the beans’ sugars just right, ensuring a smooth finish without bitterness. Whether it’s the lively Onward Light Roast, the harmonious Centered Medium Roast, the bold Lioness Espresso, or the deep Dreamer Dark Roast, each blend is crafted to elevate your coffee experience, perfect for sipping black or with your favorite add-ins.
