Arabica and Robusta are different coffee species

Most specialty coffee is built around Coffea arabica. Robusta is the common name used for Coffea canephora. The plants differ in genetics, growing conditions, flavour potential and chemical composition.

Researchers consistently find higher caffeine accumulation in Robusta than in Arabica. That is one reason a Robusta-heavy blend can behave differently from a 100% Arabica coffee even before brewing enters the picture.

Why caffeine is not the only reason species matters

Arabica is usually associated with the wider range of flavours prized in specialty coffee, while Robusta is often described as heavier, more bitter and more roast-forward. Those are broad tendencies, not rules for every lot.

Robusta also has legitimate uses. It can add body, crema and caffeine to espresso blends and is widely used in instant coffee. The point is not that one species is morally better. The point is that the species changes the raw material.
